Ahhh, crepes.  This is one of the favorite recipes in my household.  It doesn’t even taste gluten free!

Gluten Free Crepes

Ingredients:

  • 2 large egg
  • 1 tablespoon oil
  • 2/3 cup milk (or substitute)
  • 1/2 cup sorghum flour
  • 1 dash salt
  • 1 tablespoon sugar

Recipe Instructions:

  1. Whip the eggs in a bowl till frothy.
  2. Add oil and milk and whip.
  3. Add dry ingredients, mixing until lumps are gone.
  4. Heat skillet on medium.
  5. Add tsp of oil to coat the pan.
  6. Pour in enough batter to cover pan thinly.
  7. Flip when edges are dry and golden brown.
  8. Remove after just a few seconds or it will burn.

Makes about 4 crepes.

Ahh, yet another tasty breakfast recipe.   This one was designed with those who also need to be yeast-free in mind (hence the waffles instead of bread).  

Gluten Free Waffle French Toast

Ingredients:

  • 4 frozen gluten-free waffle (I use Van’s Wheat Free Waffles)
  • 1 tablespoon butter
  • 2 egg (or 1/2 cup egg beaters)
  • 1/2 teaspoon vanilla
  • 1 tablespoon milk
  • 1/4 teaspoon ground cinnamon

Instructions:

  1. Toast waffles until browned and crisp.
  2. Whisk eggs, vanilla, milk & cinnamon in a shallow bowl.
  3. Heat a non-stick skillet over medium heat and melt butter.
  4. Dip waffles in egg batter and place in skillet.
  5. Cook until browned, turn and cook on other side.
  6. Serve with butter and syrup.
