Ahhh, crepes. This is one of the favorite recipes in my household. It doesn’t even taste gluten free!
Gluten Free Crepes
Ingredients:
- 2 large egg
- 1 tablespoon oil
- 2/3 cup milk (or substitute)
- 1/2 cup sorghum flour
- 1 dash salt
- 1 tablespoon sugar
Recipe Instructions:
- Whip the eggs in a bowl till frothy.
- Add oil and milk and whip.
- Add dry ingredients, mixing until lumps are gone.
- Heat skillet on medium.
- Add tsp of oil to coat the pan.
- Pour in enough batter to cover pan thinly.
- Flip when edges are dry and golden brown.
- Remove after just a few seconds or it will burn.
Makes about 4 crepes.

Ahh, yet another tasty breakfast recipe. This one was designed with those who also need to be yeast-free in mind (hence the waffles instead of bread).
Gluten Free Waffle French Toast
Ingredients:
- 4 frozen gluten-free waffle (I use Van’s Wheat Free Waffles)
- 1 tablespoon butter
- 2 egg (or 1/2 cup egg beaters)
- 1/2 teaspoon vanilla
- 1 tablespoon milk
- 1/4 teaspoon ground cinnamon
Instructions:
- Toast waffles until browned and crisp.
- Whisk eggs, vanilla, milk & cinnamon in a shallow bowl.
- Heat a non-stick skillet over medium heat and melt butter.
- Dip waffles in egg batter and place in skillet.
- Cook until browned, turn and cook on other side.
- Serve with butter and syrup.
