Here is a recipe for an interesting pineapple snack.
Gluten Free Baked Pineapple Recipe
Ingredients:
- 1 #2 can crushed pineapple
- 2 T cornstarch
- 2 eggs, beaten
- 1/2 c sugar (or 1 c to taste)
- 1/2 c water
- cinnamon to taste
Baking Instructions:
- Preheat oven to 375 degrees.
- Grease an 8 x 8-inch pan with butter.
- Beat eggs until well mixed.
- Add water and pineapple and stir.
- Mix cornstarch and sugar together well and stir into pineapple mixture until well blended.
- Pour into greased dish and sprinkle with cinnamon.
- Bake for 25 to 30 minutes.
Serve warm or at room temperature. Store in refrigerator.
