I think you make a great point about cross-contamination.  

I have four Subways within four blocks of where I work. You would think a company that big would educate employees and put a little effort into a gluten free menu, but I suppose cross contamination will always be a problem.   They are about as big as McDonald's these days.

We all know deli meats (especially cheaper kinds) are a very common source for hidden gluten, but I wouldn't be so sure Subway would know that.  Personally, I would never eat at a sandwich place that doesn't train/educate their staff, is fully knowledgeable about the subject, and makes loaves of bread within a small space all day...</description>
