I think you make a great point about cross-contamination.

I have four Subways within four blocks of where I work. You would think a company that big would educate employees and put a little effort into a gluten free menu, but I suppose cross contamination will always be a problem. They are about as big as McDonald’s these days.

Interesting…however I would be EXTREMELY concerned with cross-contamination issues. Also, I wonder how educated Subway really is about gluten-free diets.
We all know deli meats (especially cheaper kinds) are a very common source for hidden gluten, but I wouldn’t be so sure Subway would know that. Personally, I would never eat at a sandwich place that doesn’t train/educate their staff, is fully knowledgeable about the subject, and makes loaves of bread within a small space all day…

According to the book, “Celiac Disease: The Hidden Epidemic”, written by a doctor at the Celiac Disease Center at Columbia University, breastfeeding has been shown to protect children from Celiac. Breastfed babies that eventually developed Celiac usually did so at a later age than formula fed babies, even if thier mothers were consuming gluten. Breastfeeding has numerous health benefits.
