Recipe: Gluten Free Flourless Chocolate Cake

There are a few good flourless cakes out on the market, but here is a good one for a chocolate cake.

Gluten Free Flourless Chocolate Cake Recipe

Ingredients:

  • 1 1/2 cups semi-sweet chocolate chips or 8 ounces chopped bittersweet chocolate
  • 6 large egg white
  • 6 tablespoons unsalted butter, plus more
  • unsalted butter, for the pan
  • 1/2 cup sugar
  • 6 large egg yolk

Baking Instructions:

  1. Preheat oven to 275 degrees. Butter a 9 inch springform pan well.
  2. Place butter and chocolate into a large glass bowl and microwave for 30 second increments, stirring well until after each increment until completely melted. Allow to cool slighly. Whisk in the eggs yolks well.
  3. In another bowl, add the egg white and mix with a hand mixer until soft peaks form, about 3-5minutes.Gradually add the sugar and beat until soft and fluffy.
  4. Mix in 1/4 of the egg white mixture to the chocolate mixture and stir well.
  5. Gently fold in the rest of egg whites until mixed well.
  6. Pour into springform pan, smoothing out the top. Bake at 45 to 50 minutes.
  7. Allow to cool completely. Dust with Confectioners sugar and maybe some berries on top!

Recipe: Gluten Free Pizza

There are quite a few gluten free pizza recipes around the internet, but here is one I hadn’t seen before.

Gluten Free Pizza Recipe

Ingredients:

  • 1 Pkg. instant yeast
  • 1 cup sweet rice flour
  • 1 cup brown rice flour
  • 1/2 c. sorghum flour
  • 2 T oil of choice (I used canola) (plus a little extra for browning crust)
  • 1 C. WARM (not hot) water (105-115 F)
  • 1 tsp. regular cane sugar

Baking Instructions:

  1. Prepare yeast- in a large glass or plastic bowl, add yeast and sugar to warm water. Still gently with a wooden or plastic utensil (I use a wooden chopstick) Allow to set for several minutes (about 10 minutes) so the yeast “blooms”.
  2. Add flours, oil and salt. Mix well with a wooden spoon. Once fully combined, it should be a nice ball shape. Allow to sit in bowl for about 5 minutes.
  3. Place dough onto surface dusted with rice flour or cornstarch. Work it into a round. I find this works easiest by picking the dough up and allowing it to hang from my hand, then turning and repeating until I have a nice, semi-round shape of desired thickness. This made a crust approx. 12 inches in diameter.
  4. Place dough onto stoneware (or other pizza pan).
  5. Top with desired toppings, we used sauce, ground meat and cheese because that’s what I had on hand. Sprinkle top with herb mix if available. Brush edges not covered by toppings with a little bit of oil for browning.
  6. Bake at 450F for about 15 minutes (our second pizza took less time than the first, so keep a close eye on it!)

Recipe: Gluten Free Maple Sweet Potatoes

Gluten Free Maple Sweet Potatoes Ingredients:

  • 2 1/2 lbs sweet potato
  • 3/4 cup maple syrup
  • 3 tablespoons butter

Baking Instructions:

  1. Cook potatoes in boiling water for about 15 minutes.
  2. Drain, peel, slice and arrange in a buttered baking dish.
  3. Add syrup and butter; bake at 350F until tender and well-glazed, about 45 minutes, turning occasionally in the syrup.

Recipe: Gluten Free Spaghetti and Meatballs

One of the best gluten free foods out there is Tinkyada, which is a gluten free pasta. However, in order to truly enjoy them, you’ll want to make gluten free meatballs with your pasta. Here is a great recipe I ran across:

Gluten Free Spaghetti and Meatballs Recipe

Meatball Ingredients:

  • 1 small to medium sweet onion
  • 4-5 cloves garlic, peeled, cut in half
  • 1 medium carrot, peeled, cut into several pieces
  • 1 pound of organic grass fed ground beef or buffalo- either works
  • 1 pound of organic ground pork
  • 1/2 cup Annie’s Naturals or Muir Glen Organic Ketchup
  • 1 tablespoon organic molasses
  • 1 tablespoon balsamic vinegar
  • 1/4 cup finely chopped fresh Italian parsley
  • 1/3 to 1/2 cup gluten-free bread crumbs- processed from 2-3 slices of stale tapioca bread with some hefty shakes of dried Italian herbs
  • 1/4 teaspoon cinnamon (my secret ingredient!)
  • 1 teaspoon fine sea salt
  • Dash of red pepper flakes, if desired
  • Olive oil, as needed

Baking Instructions:

  1. Preheat the oven to 350 degrees F. Line a baking sheet with parchment paper.
  2. Toss the onion, garlic and carrot pieces into a food processor and pulse until the texture is very finely diced. Set aside.
  3. In a large mixing bowl, briefly stir together the ground beef and pork. Add in the processed onion, garlic and carrot mixture, ketchup, molasses, balsamic vinegar, parsley, gluten-free bread crumbs, sea salt and pepper flakes. Mix gently to combine. Try not to over-mix (over-mixing makes a dense meatball).
  4. Rub a little olive oil on your hands and form the meatball mixture into balls (roughly the size of golf balls). Place them on the lined baking sheet. You should end up with about 20-24 balls.
  5. Bake the meatballs in the center of the pre-heated oven for about 30 minutes until done (no longer pink in the center).

Note: Smaller meatballs cook faster, so if your meatballs are smaller, check them at 20 minutes. If you make larger meatballs, they’ll take longer to cook through. Adjust baking times accordingly.

Recipe: Gluten Free Cereal - Baked Flax Squares

Recipe for cereal? That is right! I was a little shocked when I ran across it as well, but figured I would share in case someone is interested in making their own gluten free cereal.

Gluten Free Cereal Recipe: Baked Flax Squares

Ingredients:

  • 1/2 cup gluten-free flour (I use 1 part each of garfava, tapioca and cornstarch)
  • 1/4 cup brown rice flour
  • 1/4 cup flax seed meal
  • 2 tablespoons cornmeal
  • 2 tablespoons nonfat dry milk powder
  • 2 teaspoons dry active yeast
  • 1/4 teaspoon salt
  • 1 tablespoon canola oil
  • 1 teaspoon molasses
  • 1/4 cup water

Baking Instructions:

  1. Preheat oven to 350 degrees.
  2. Mix dry ingredients and make a well in the center of the bowl.
  3. Mix wet ingredients in the well, then stir everything together, using your hands to form a ball.
  4. Place ball of dough on a greased cookie sheet and roll out as thin as possible (I don’t recommend air-bake cookie sheets). Optional: At this point you can score the dough with a pizza cutter or knife so that it will easily break apart into uniform shapes when done.
  5. Bake for 12-15 minutes or until edges are browned and cereal feels slightly crisp and dry. If not dry, turn oven off and leave in longer.
  6. Remove from oven and break into small pieces. Store in an airtight container.
