Most people just buy a pancake mix, but if you are someone who enjoys making their own gluten free recipes from scratch, here is what you’ll need to make your own pancake mix!
gluten free Pancakes Recipe
Ingredients:
- 1 cup of Gluten Free Flour
- 1 cup Milk
- 1 Egg
- 1 tsp Baking powder
Directions:
- Place flour in a bowl, use a fork to break any large clumps (you can sift-takes a while) with tsp of baking powder
- Add milk and egg and whisk well
- Place in fridge for 20mins
- Heat large fry pan and add a little butter, med-high temp.
- Pour in mixture to desired size (about a 1/4 for small ones)
- Cook until bubbles form over top of pancake or after 2mins, cook another minute on other side.
Here is a great recipe for german pancakes which is advertised as being both gluten free and dairy free.
Gluten Free/Dairy Free German Pancake Recipe
Ingredients:
- 1 cup rice milk
- 1 cup gluten-free rice flour mix
- 6 eggs
- 1/4 teaspoon salt
- 1/4 cup coconut oil (I used a bit less or drained excess)
- 1/2 teaspoon xanthan gum
Directions:
- Preheat oven to 400 degrees.
- In a 9×13 pan, melt oil in oven.
- In a medium bowl mix milk, flour, salt and eggs.
- When oven is at 400 degrees, take out pan and pour in mixture.
- Cook for 20-25 minutes or until fluffy.
- Serve with desired toppings.
- We like syrup.
There are a lot of interesting gluten free pancake recipes out there, but this one is probably the most interesting one I’ve found so far.
Gluten Free Gingerbread Pancakes Recipe
Ingredients:
- 2 cups baking mix, Pamela’s Ultimate or other gf pancake mix
- 3 tablespoons sugar
- 1 1/2 teaspoons cinnamon
- 1 1/2 teaspoons ginger
- 3/4 teaspoon allspice
- 1/2 cup crystallized ginger
- 2 eggs
- 1 1/2 cups milk
- 4 tablespoons butter, melted
Baking Instructions:
- In a bowl, whisk baking mix, sugar, spices and crystallized ginger. In separate bowl, beat eggs. Add milk and butter to eggs and mix well. Pour wet ingredients into dry ingredients and gently stir until just combined.
- Cook on griddle.
Ahhh, crepes. This is one of the favorite recipes in my household. It doesn’t even taste gluten free!
Gluten Free Crepes
Ingredients:
- 2 large egg
- 1 tablespoon oil
- 2/3 cup milk (or substitute)
- 1/2 cup sorghum flour
- 1 dash salt
- 1 tablespoon sugar
Recipe Instructions:
- Whip the eggs in a bowl till frothy.
- Add oil and milk and whip.
- Add dry ingredients, mixing until lumps are gone.
- Heat skillet on medium.
- Add tsp of oil to coat the pan.
- Pour in enough batter to cover pan thinly.
- Flip when edges are dry and golden brown.
- Remove after just a few seconds or it will burn.
Makes about 4 crepes.
You can often find good gluten free waffles in the health food stores, but here is a nice recipe for homemade gluten free waffles.
Gluten Free Brown Rice Waffles
Ingredients:
- 2 cups brown rice flour
- 1 cup buttermilk or sour milk (milk and vinegar)
- 2 Tbsp oil
- 1 tsp. vanilla extract (or your favorite; maple, almond or walnut)
- 1 tsp salt
- 1 Tbsp. sugar
Mix the above. Add some water if too thick or too dry. Now add the following ingredients:
- 2 eggs
- 1 tsp. baking powder
- 1/2 tsp. baking soda
Instructions:
- Mix above ingredients well.
- Let batter sit for 1/2 hour.
- Preheat waffle iron.
- Oil it well and as often as needed while making the waffles.
- Make waffles following iron manufacturer’s instructions.
