Gluten Free Restaurant Menu: Ruby Tuesdays

Though Ruby Tuesdays has long been hesitant to commit to anything on their menu being gluten free, I did not that their website’s FAQ now contains the following information:

Currently all of our fried food is prepared in soybean oil. Our French fries are fried in the same oil as our breaded items.

Please be aware that we do serve white and wheat hamburger buns which all contain wheat flour. Our premium knot roll and rolls used for Ruby Minis are white bread, while our Golden Bun used for most burgers is a wheat bun. All are made from wheat flour.

The following menu items are acceptable for guests with a gluten intolerance or Celiac Sprue disease:

Steaks (with Ruby’s seasoning only)
Chicken Oscar
Chicken Fresco
Any burger without bread (EXCLUSIONS: turkey burgers, the onion tanglers on minis, French fries)

Sides
Broccoli as currently prepared
Mashed potatoes as
currently prepared
Baked potato without sour cream
Salad bar with discretion (excludes prepared salads on the salad bar)

Acceptable salad dressings:
Bleu Cheese
Ranch
Lite Ranch
Honey
Mustard
Caesar
Thousand Island
Italian
French

Unfortunately, for all other food items, Ruby Tuesday, Inc. cannot provide a listing of allergens that might be present in our menu items for the following reasons:

It is always possible, as we are preparing food in over 800 restaurants every day, that one item will be substituted for another, and that the substitute product’s contents may be different from the ingredients in the products we normally use.

As food is being prepared in our restaurants, it often comes in contact with other food, so even though a specific item may not contain allergens, it could be affected by another food item that does.

Recipe: Gluten Free Puppy Chow

Growing up, one of my favorite snacks was puppy chow.    Sadly, it wasn’t possible to make a gluten free version……until recently.  A couple of months ago we reported that some chex cereals are now gluten free.   Because of this, why not revisit puppy chow?

Gluten Free Puppy Chow Recipe

Ingredients:

  • 9 cups Rice Chex® cereal (gluten free)
  • 1 cup semisweet chocolate chips
  • 1/2 cup peanut butter
  • 1/4 cup butter or margarine
  • 1 teaspoon vanilla
  • 1 1/2 cups powdered sugar

Directions:

  1. Into large bowl, measure cereal and set aside.
  2. In 1-quart microwavable bowl, microwave chocolate chips, peanut butter and butter uncovered on high for 1 minute and stir.
  3. Microwave about 30 seconds longer or until mixture can be stirred smooth.
  4. Stir in vanilla.
  5. Pour mixture over cereal, stirring until evenly coated.
  6. Pour into 2-gallon resealable food-storage plastic bag.
  7. Add powdered sugar.
  8. Seal bag and shake until well coated.
  9. Spread on waxed paper to cool.
  10. Store in airtight container in refrigerator.

Israel Restaurants Going Gluten Free?

Today while scouring the internet for Celiac news, I noticed a quick article in the Jewish Press about restaurants in Israel.   It appears that many are going healthy, including many gluten free alternatives:

Jerusalem – The website of 2Eat, (www.2eat.co.il) a popular Israeli Hebrew restaurant, reports that 85 percent of Israel’s restaurants now offer healthy or dietetic options to diners that often include a salad bar.

Restaurateurs who were polled said that more than one-third of their lunchtime customers order a green salad or some other salad with their meal compared to 20 percent last year.

Noam Shaked, who manages the website, said that some 8 percent of the restaurants offer a separate healthy foods menu including calorie counts of items. Even fast food chains such as McDonaldsand the popular coffee chain Aroma are providing options for diabetics and celiac sufferers. Shaked said that out of the 100 restaurant owners polled, one third said there is an increasing demand from customers for healthier menu choices.
