Large Companies Are Becoming Gluten Free Conscious
Today I ran across an interesting post over at Brand Week that I thought I would share with you. It is about General Mills and their gluten free Rice Chex. While this is exciting news, this is just one of many major changes with large companies who are starting to be more conscious of the needs of people with Celiac.
The interesting thing about the article is some statistics they site, and the fact that many people are going to a gluten free diet even without a gluten sensitivity. Here is an excerpt:
The cereal company’s announcement late last month comes on the heels of data from Mintel Consumer Intelligence, Chicago, that shows gluten-free new-product launches have grown significantly over the past several years.
New products bearing the gluten-free banner have more than tripled since 2004, reaching 700 in 2007, per Mintel. Through April, 341 more gluten-free products have launched. Sales of gluten-free products will hit $1.7 billion by 2010, per Spins.
I think this is great, but in the future it will only get better!
Recipe: Gluten Free White Birthday Cake
There are a lot of great gluten free cake recipes out there (and pre-made mixes), but sometimes it takes a certain taste for birthday cake. If you follow a gluten free diet, here is a gluten free birthday cake mix you might enjoy.
Gluten Free White Birthday Cake
Ingredients:
- 1/2 c. White Rice Flour
- 1/2 c. Sorghum Flour
- 2/3 c. Tapioca Flour
- 1/3 c. Potato Starch
- 1 c. White Cane Sugar
- 2 teas. Baking Powder
- 1/2 t. salt
- 1 t. xanthan gum
- 3/4 c. (1 1/2 sticks) softened butter or margarine
- 3 eggs
- 1 1/2 t. vanilla
- 1/2 c. milk-any type
Recommended frosting: Pillsbury French Vanilla Frosting (now gluten free)
Baking Instructions:
- Pre-heat oven to 350.
- Grease pans (this recipe makes 16-18 cupcakes, 2 6-inch round layers, 9-inch square, or a 10-inch round)
- Throughly combine the first 8 dry ingredients in a separate bowl.
- Place softened butter in mixer bowl and beat until fluffy.
- Add flour mix to butter, blending on lowest setting until combined, then changing to setting “2″ on the mixer until mixture is crumbly, about 1 minute.
- In small bowl, lightly whisk eggs and vanilla together.
- Add eggs to mixer and mix until smooth and thick, about 1 minute.
- Add milk and mix for 1 more minute.
- Pour into prepared pan and bake until toothpick is clean.
- Time will depend on the shape of your pan, but should be about 24 minutes for cupcakes, 45 minutes for a loaf pan.
- Allow to cool in pans for about 10 minutes, then remove to a wire rack.
- Frost when cool.

California Gluten Free Restaurant Menus
Recipe: Gluten Free Fish Nuggets with Tartar Sauce
It is always nice to find a good gluten free food that can be frozen and eaten over time. This is one of those situations.
Gluten Free Fish Nuggets
Ingredients:
- 3 tablespoons rice flour
- 1 egg, slightly beaten
- 4 slices gluten free bread
- 1 teaspoon dill weed
- 2 tablespoons fresh parsley, chopped
- 1 chicken breast
Gluten Free Tartar Sauce
- 1/3 cup mayonnaise
- 1 tablespoon sweet relish
- 1/2 teaspoon lemon juice
- 1 dash salt and pepper
Baking Instructions:
- Preheat oven to 425 degrees.
- Line a cookie sheet with parchment or spray with non-stick coating.
- If your chicken is fresh, freeze for 15 minutes to ease the slicing or if frozen only partially thaw. Slice the small tip off at about an inch, cut in half horizontally and then slice each half in 1/4 inch slabs vertically so you end up with about 1 inch by 1 inch slices.
- If you are using fish cut to same size.
- Blend the Italian seasoning and parsley with the bread in either a food processor or a blender until very fine crumbs. If it’s sticky and doesn’t want to crumb add rice flour a teaspoon at a time until it crumbs nicely.
- Put the rice flour in one shallow bowl the egg in another and the crumbs in a third.
- Dredge each piece through the rice flour to coat thoroughly then the egg than the crumbs (we like lots of crispy coating).
- Bake chicken for 10 minutes flip and bake for 5 to 10 more minutes until done. For fish 5 minutes on the first and 3 on the second is usually sufficient.
- They reheat nicely in a toaster oven.
